I am coming back with my healthy recipes again! I have idea for vegan and sugar free cashew cheesecake for your healthy Easter menu ๐ฃ ๐ฃ ๐ฃย
Ingredients:ย
Base:
- 250 g of vegan oatmeal cookiesย
- 4 tbsps. of coconut oil
Cream:
- 250 g of cashew nuts
- 100 g of dates
- 3 tbsps. of unrefined coconut oil
- 1 bio-lemonย
Mango mousse:
- a ripe mango
- ยฝ teaspoon of agar agar
Preparation:ย
Base:ย
Grind cookies with a blender. Melt coconut oil and mix it with the cookie powder. Line the cake tin with the mixture.ย
Cream:ย
Leave cashew nuts to soak for the whole night. The next day, drain them and put in a blender. Soak the dates in warm water for an hour, then drain them and add to cashews. Pour lemon juice and add lemon zest and coconut oil. Blend all the ingredients into a thick and smooth paste. Lay the cream on the base.ย
Mango mousse:ย
Peel the mango and blend into a mousse. Add agar and heat in a pan until the mixture starts boiling. Pour the mousse over the cream. Put the ready-made cake in the fridge until it settles. ย ย ย
