Do you like poached eggs? If yes, then you are going to love this turkish menemen recipe. The reason being here the twist is in what goes with the poached eggs. And depending on how much variation you add to the recipe, I'd recommend you to try out this recipe for yourself and see if you like it.
This is remixed or you can say my own version of turkish menemen, so follow along the ride.

Ingredients
Here are some of the items that you need.
- 1/2 cup Tomato puree
- 4 Chopped onions
- 1 chopped Capsicum
- 4-6 tbsp chilly powder
- 2 tbsp cumin seeds
- 1 tbsp ginger garlic paste
- 2 potatoes sliced
- turmeric
- bread
- olive oil
- salt for taste
- 1/4 cup coconut milk
- coriander
- sliced lemon
- 2-4 eggs
- mint leaves
- dried fenugreek powder
You can additional item depending on if you like specific gravy taste. My recipe is more or less suitable for the tropical folks considering I am using the coconut milk and the chilly powder to balance the taste.
Instructions
You can do the initial gravy depending on your local taste as well. My here instruction follow the variation of the turkish recipe adjusted for the local recipe.
- Take 2 tbsp olive oil in a pan. And saute chopped onion, ginger garlic, cumin seeds for 2 minutes.
- After 2 minutes when you see the chopped onions turning brown, you can add the turmeric 1/4th tbsp into it. Add sliced potatoes into the pan.
- After 5 minutes of saute, now add tomato puree into the pan and keep steering it for 1 or 2 minutes till you see the mixture starts bubble on medium flame.
- Keep steering after adding a bit of salt for taste.
- You can also add some lemon juice on the top and steer the gravy.
- Add 1/4 coconut water into the mixture and keep it on medium flame for 5 minutes.
- Now add eggs on the top of the mixture and then put on the lid.
- after 1 minute you can add the dried fenugreek powder.
- Keep the lid on for next 5 minutes or so. Then serve once the gravy gets thick.
My version looks something like this:
Garnish the gravy with the mint leaves, sliced lemon and serve with bread.
