Welcome to my blog again . I am so glad that you are here. Today i would like to share the recipe of potato brinjal curry recipe which i tried for first time and it turned superb in taste.

Potato brinjal curry is a simple and healthy curry recipe which is unique in taste. The combination of both ingredients make it unique and superb. Usually in India we loves potato and used it with many curry recipe. With brinjal i tried it first time. Even i used brinjal as a hero ingredients and use the quantity more than potato. You can also cook it with onion and tomato gravy.
This time i simply made it with brinjal, potato, tomato, green chilli and some spices. Which we can enjoy in lunch or dinner with chapati.

Ingredients ✅
- Brinjal/ eggplant 3-4
- Potato 1 big
- Tomato 1
- Green chilli 1
- Oil 2 tbsp
- Cumin seeds 1 tsp
- Asofoideta/ hing one pinch
- Salt to taste
- Red chilli powder 1 tbsp
- Turmeric powder 1 tsp
- Coriander powder 1 tbsp
- Garam masala 1/2 tsp
- Coraindar powder 1 tsp

Process ✅
Step 1 :
First take the all ingredients, wash them well and chooped them . Remember Potato took more time to cook comparing to brinjal. So chopped brinjal in big slices than potato.

After chopping place them in a bowl filled with water and keep separate the Brinjal and potato .

Step 2 :
Now take a pan and heat oil in it.

When oil gets hot add cumin seeds and hing in it.

When the seeds start to crackle add chopped potato in it. Saute them for 2 minutes.

Step 3 :
Now add chopped brinjal in it.

Add salt and turmeric powder and mix well. Vegetable gets nice coating of turmeric powder. Cook till they become soft till 80%. Keep flame low to medium.


Step 4 :
After 2-3 minutes when vegetables got soft. Add tomato in it after 1 minute a
dd other spices in it. Mix well and little water in it, so that spices do not brunt.

Mix well and cook for 2 minutes.

Within 10 minutes your curry will be ready.

Enjoy it with hot chapti and live happy and healthy 😃.


Pro-tip : Always add Potato first , because potatoes took more time to cook than brinjal. Overcooked brinjal do not taste good.
