Day 2 of My 7 Day Smoothie Challenge
Today is Day 2 of my 7 day smoothie challenge, and so far, so good!
I am really enjoying simplifying my diet and eating fresh, whole foods and no animal products whatsoever. As I mentioned in yesterday's post, Day 1 of My 7 Day Smoothie Challenge! and my post introducing this challenge, 7 Day Smoothie Challenge, Here I Come! I am slowly moving towards a 100% vegan diet. I am super EXCITED about it too!!
Since my diet has been "off the rails", I figure a week of smoothies and salads is just what I need to get back on track. So, what did I eat today? A few fruit smoothies and a very large salad. This really has not been hard for me simply because I love smoothies and salads as much as I love cake and ice cream =)
Breakfast and Lunch
At breakfast and lunch, I made this delicious fruit smoothie using honeydew and banana.
~ Honeydew Smoothie Recipe ~
1 frozen, ripe, banana
In my personal blender, I added almost a half of a honeydew melon. I cut the honeydew in half and used all but 1/4 of the halved melon. You can also use frozen honeydew if want it super cold. Since I used chilled honeydew, not frozen, the smoothie was the consistency of a slushy - very refreshing, and sweet!
Dinner
To throw together this salad, I tossed together kale, massaged it with some ripe avocado, then topped with freshly squeezed lime juice, fresh salsa, lots of green onions, and salt and pepper. I know it may sound like a strange salad combination but it was simple, fast, and very uncomplicated... just what I wanted. This is something I do a lot, actually. I forego the salad dressing and just massage my greens with avocado. As long as you add some salt, it tastes great!
