I love growing my own food! Being an urban farmer is hard work, but the results are totally worth it. My tomatoes have been producing like crazy so I've been cranking out sauces of all sorts as of late. A simple favorite of mine consists of tomatoes, basil, garlic and salt. I roast everything together in a 425 degree oven for about 2-3 hours or until the tomatoes are soft and bubbling up a storm. Once everything has cooled I put it through my food processor. I use this recipe as pizza sauce, pasta sauce and even to make a delicious tomato soup.
Another easy and flavorful way I like to eat tomatoes is on my homemade sourdough bread. I do a rough chop, just enough tomatoes to fill a 10 inch skillet, and then I add 2-3 tablespoons of olive oil, & 2-3 cloves of garlic. I let it simmer until the tomatoes are soft and most of the liquid has been reduced down. I then add basil and salt. How much depends on your preference. I like a healthy amount of salt and generous amount of basil, myself. I then use a bamix to give the mixture a pureed texture. It tastes delicious on a slice of sourdough toast with a little havarati cheese!
