Here's another #ulography post since there's quite a lot I want to share these days, but I don't really want to make 5 posts a day so I'll try to combine few things at once. Today my main focus ended up to be food!
Smoothie
My morning started with coffee and when I got hungry, I thought it would be nice to make a smoothie since I haven't made one in a while. Good thing is we had some fruits I like to use for my smoothies and some other ingredients. I never follow any recipes when it comes to smoothies, I just throw in what I have and what I like, hoping for the best! :D
So today I used:
- 1 banana
- 1 nectarine
- 1 one green apple
- oats
- cacao
- cinnamon
- water
Then I remembered our fig tree! My mom found two ripe figs couple days ago, most of them are still small. I decided to take a look and I got lucky - found one big, ripe fig! I prefer blending them in a smoothie a lot more than eating them raw.
Throwing everything in and blend, blend, blend. I love how simple, easy and fast this is! Healthy breakfast with minimum effort. Plus you can switch things up and try different combinations all the time.
Final result! It was delicious! I think that nectarine and fig really gave this smoothie a nice flavor. My nephew also tried some and he loved it.
Mini Grocery Haul
Later in the day, while running some errands, I stopped by at the health food store and a regular store to get few things. I picked up some bananas, lemons, ginger, mushrooms and I also got chia seeds and sunflower seeds but I forgot to add them to the picture. Another thing I found and decided to try is this replacement for coffee. It's pretty much a roasted and grounded root from a plant called Chicory. I did some research on it and seems like it has many different health benefits. I tried it today and it tastes very similar to regular black coffee I usually have. Since it has no caffeine, I am wondering how this will turn out as I am a coffee consumer for many, many years (I'm sorry in advance if I become a little bit grumpy these days, lol).
Lunch time
My mom is the one who makes lunch for the family and I eat whatever she makes except for one thing, which was on the menu today. So I had to make something for myself and as always, I use what I have on hand and what's easy to combine, with minimum chances of failure.
Dices onions and Greek salad mix (I love using this because it has sea salt, dry herbs and some chilli flakes so it's pretty much the only spice I need, for my taste at least) followed by chooped green bell pepper from our garden.
After few minutes I added half pack of mushrooms I bought today. I also added some finely chopped ginger. I never added ginger toany dishes I made before so I used just a little bit, but it's all up to the personal preference.
When mushrooms were almost done, I added cabbage, from our garden as well. Mixed everything and left it on the heat for few more minutes since I like the cabbage to still be crunchy.
Then I thought, why not add some sunflower seeds, something I've also never done before. But I was guessing they would also give this dish that crunchy texture.
This is the final result! I had it with a piece of bread and it was yummy.
Here's a closer look! :) I really enjoy these random cooking adventures of mine, that are rare but fun. I usually don't have any specific idea of what I want to make and how the final "product" will look like, I just go with the flow. But I do keep it simple and easy, nothing fancy or crazy! :D
