Today Nina had a day off from work and the time to make a delicious lunch: Bruschetta with scrambled eggs, tomato- and ruccula salad.
Bruschetta is an Italian dish that originally consists of grilled or fried bread with garlic, olive oil and salt. Traditionally, it was more like a poorly dish, which was made to get used old bread. Today it is usually served with something on top, which makes it a delicious starter or lunch. Cured meat and salsa is quite a common topping, but you can use pretty much whatever you want. As we are vegetarian we chose scrambled eggs with tomato- and ruccula salad this time. To make it perfect, we only missed the sun flower seeds on the very top.

We used a little sundried tomatoes mixed with the fresh ones to add more taste. And of course also some onion (the silver ones) and some spices.
Served with a glass of fresh water this was a delicious lunch meal!
