Hi, vegan friends! Today, I’d like to introduce another special vegan-based dish. It’s a combination of flour, rice vermicelli, and coconut milk. This trio makes for a fantastic dish to serve at home.
Vermicelli Noodle Coconut Cake
Rice noodle coconut cake is a snack idea that’s perfect for serving at my house. Since my mom loves sweets—especially moist cakes like this—she’s sure to love it. This cake is made from rice noodles, which is something I’d never even considered before. It’s mixed with coconut milk and then baked on a non-stick pan or steamed—the original recipe actually calls for steaming, but since I wanted to make it different, I intentionally baked it.
As for the filling, it’s coconut unti cooked with sugar, which I usually make in my previous posts. To save time, I’ll share the recipe with all of you right below.
Ingredients
1 pack of corn vermicelli
400 ml coconut milk
½ teaspoon salt
200 grams all-purpose flour
Pink food coloring, as needed
Instructions
Soak the corn vermicelli in hot water for about 2 to 4 minutes, making sure it’s tender and fully cooked.
Once cooked, drain it, then add the flour and stir—don’t forget to add salt as well.
Add the coconut milk little by little and stir until evenly mixed. Then add the food coloring and stir again.
Scoop one ladleful of the batter and cook it in a pan until done; repeat until all the batter is used up.
For the final step, add shredded coconut on top, then roll it lengthwise to your liking.
Result
The result is absolutely beautiful—a bright pink color, just as I wanted—and the noodles look incredibly appealing when served. I absolutely love how it turned out; the flavor is also fantastic—the dough is incredibly soft, complemented by the savory-sweet coconut filling. The aroma is wonderfully fragrant, and the palm sugar really comes through—this coconut filling is my favorite.
