Kikil is the skin or other part of beef which is made in a special way to serve as the best side dish at home. This kikil is often sold in the market, many people even make it with special steps at home. Just like what my mother did yesterday, yesterday's Eid celebration got a lot of sacrificial meat. But not only that, my father also got a whole cow leg that can be used as gravel.
After being brought home, mother immediately washed it, and asked me to burn the leg. I am very enthusiastic about doing it because I really like the part of the foot that is made of gravel. Now, the process of making gravel does have various ways, some are boiled, some are burned. So this time my mother said the method of burning would be faster.
Not only is it fast, the process of burning also makes it easier for us to quickly remove the fine hairs on the skin of the feet, see also there are parts that are still black on the gravel, all because it was burned. Kikil that is burned with boiled one has a different color in the end result. Now, during some of these stages, it's a shame I forgot to take a picture. Imagine myself burning with firewood and it all gets my hands dirty. So I forgot to capture this moment! After finishing burning the process of making gravel, it is boiled until it is soft and can be cooked. Let's cook!
Materials Used
100 grams of gravel
1 board of tempeh
2 potatoes
2 tomatoes
5 green chilies
2 cloves of garlic
3 shallots
Procedure Cooking
Cut the potatoes, and put the potato pieces in water so that the sticky don't turn black.
Cut the tempeh, cut into squares, then marinate briefly with a sprinkling of salt.
Cut the red onion and garlic according to taste.
Then the chopped tomatoes and chilies are all ready to be stir-fried in a pan.
Fried tempeh, fry until crisp and also golden brown.
Sauté the shallots and garlic, then add the chopped tomatoes and chilies.
Add the potato pieces, then add the water.
After the water starts to shrink, add the kikil that has been boiled, then stir.
Season with salt, add tempeh and stir again and cook briefly.
Results
Kikil stir-fried potato tempeh is ready to be enjoyed. Serve with warm white rice, it will be very tempting. Just imagine me enjoying it with warm white rice during the day. Very delicious and the taste is so tempting my tongue. The taste is savory and spicy, the texture of gravel is chewy and also soft on potatoes and tempeh. Perfect mix to enjoy kikil my way.
