Hello Everyone were back again for week number #2 of the steemit-ironchef championship, hosted by . This weeks theme is the wonderful Carrot. The base ingredient for a multitude of dishes they are a must have ingredient in the kitchen. But sometimes its nice to make them the Star of the show.
I was lucky to have carrots growing in the veg patch so they went from the Earth to the Plate in about 30 minutes. Everything was fresh from the garden the carrots, beans, peas, parsely and the nasturtium flowers. So the simple vinaigrette was all it needed to create a beautiful medley of flavours exploding with life and colour!
My first time growing Carrots so they're not the prettiest but they have character, and incredible flavour from the rich organic soil. The variety is called Nantes.
Podded some mature Runner Beans, the pink ones are softer and the purple ones have more crunch. Packed with minerals, and the colours are so vibrant!
Sliced the bigger carrots into long ribbons and grated the smaller ones, to add some variety of texture and keep it interesting.
A simple French 'style' vinaigrette with fresh Parsely and palm sugar, which has a subtle caramel sweetness. I used cider vinegar but red wine vinegar works very well too.
Shake it all up in a jar for a few minutes until it resembles Frobscottle (from 'The BFG'). Mix with carrot and beans and let rest for ten minutes, adjust seasoning.
The last of my fresh Peas and some pretty 'edible' nasturtium flowers that taste sweetly peppery.
Finished off on the plate with a sprig of carrot leaf and a thin carrot slice -so the light shines through, then an extra drizzle of the dressing :)
