Ingredients
1 Sea Bass Filet
For the Apple Caponata:
4 mix apple
1 onion
1/2 red onion
1/2 red pepper
1 carrot
100g almonds
10g Sultana
2 cups of Sugar
1 cup of red wine vinegar
1 teaspoon of nutmeg
For Curry apple sauce:
2 Apple
1 clove of garlic
Q.p nutmeg
Q.p curry powder
1 spoon salty butter
pinch of salt & pepper
For decoration
Dry apple
Pomegranate
Rocket salat
Preparation:
Step 1 
Cut all the vegetables for the Caponata and heat up the pan. When the pan is hot put all ingredients in it with olive oil.
Step 2 
When vegetables are cook add the sugar and let it caramelised. Put the red wine vinegar and let it cook for 10 min on the low heat.
Step 3
For the Curry apple sauce:
Pre heat the pan and when is hot put the butter with garlic. Let it get brown and add spices with peeled apples. Let it cook for approx 10 min but check to add some water to not get dry. When apples are cook get it blend.
Step 4 
Heat up very well the black pan and put filets of the Sea Bass for 3 min each side.
Step 5 Platting
Put some apple curry sauce first and then put some apple caponata. Then place Sea Bass filet and finish off with some dry apples, pomegranate and rocket salad to give some colour.
