Pumpkin Quesillo
Ingredients:
1/2 kg of pumpkin.
3 eggs.
¼ kg. of sugar.
4 teaspoons of cornstarch dissolved in 1/2 glass of water.
1/2 teaspoon powdered cinnamon (optional).
1 cup of sugar at ½ cup of water to make the caramel.
Preparation:
Chop the pumpkin into pieces and steam for about 15-20 minutes. Then drain, puree and let cool. Blend the puree with the eggs and sugar. Then add the cornstarch dissolved in a little water and, if desired, the powdered cinnamon. Next, prepare the caramel in the cheese pan, place the mixture and bake in a bain-marie at 250°C for 50 minutes, or if you prefer, cook it in a bain-marie pan for 1 hour or in a pressure cooker for approximately 15 minutes. Finally, let it cool, remove it and serve it.
Makes 6 servings.
