Wiiiiiiings! I know it's not Wednesday (Wings Wednesday??) but we had such amazing weather recently in Sydney and wings are something we always used to eat in Summer/Spring when I was growing up, so I thought I'd bring back some memories and make a recipe my mum taught me.
My mum is actually the inspiration for a lot of my cooking, she's a fantastic cook (I know everyone thinks this of their mum) but she actually is an amazing cook. I didn't realise how lucky I was growing up until I started eating out and thought to myself "Hmm, mum makes this better" ... A LOT haha.
Anyway, this is one of the dinners we used to have, I always enjoyed it because growing up we ate a lot of traditional Vietnamese food but when we had wings I felt like it was a "Western" meal so it seemed kinda fun to eat even though it was made Asian style lol.
Hope you guys enjoy it, here we go!
1. Ingredients you'll need - yes the spring onions were that big, they've clearly been working out at spring onion gym.
2. I separated the drumstick from the rest of the wings (some people like drumsticks and some people like wings so at least this way no one fights!)
3. Add onion, garlic and spring onion
4. Add onion powder, garlic powder, black pepper, salt, vegetable stock
5. Add brown sugar, oyster sauce, soy sauce.
6. Get in there and mix it up! I used disposable gloves as I try to avoid touching raw chicken with my hands - no issues if you do though, just wash your hands thoroughly after :)
7. Grab a baking tray lined with aluminium foil
8. Wings on...
Drumsticks on...
9. Halfway mark, time to flip 'em
10. ...and they're done!
11. Quick coleslaw to serve on the side (red cabbage, white cabbage, carrot, mayonnaise and some coleslaw sauce)
Dinner is served - get them on the table and call everyone asap! I'm not going to lie, it looks like a lot of wings and it was but they are so addictive, I ate about 10....and then a few hours later I had another 5 as a midnight snack haha.
P.S. my wings were tiny because I use free range chicken and it's often smaller but I've used normal chicken wings as well and they're just as good.
