A good Caesar salad dressing can be life-changing. Not that cloying, thick dressing that comes in a pre-made bottle, but rather, a homemade rich, creamy emulsion that has an explosion of brine from the gorgeous anchovies, and a round mouthfeel from the Parmesan cheese.
A good Caesar salad doesn't need much. Some crisp Cos lettuce, good quality Parmesan, some softly boiled egg and most importantly, some luscious anchovies.
INGREDIENTS
- 6 anchovy fillets
- 2 garlic cloves
- Maldon salt
- 2 large eggs
- 2 T fresh lemon juice
- 1 tsp Dijon mustard
- 2 T good quality olive oil
- 1/2 cup canola oil
- 3 T finely grated Parmesan + extra for serving
- 2 small ciabiatta rolls
- small bag of Cos lettuce
METHOD
First, start with the dressing. This can be made in advance, if needed. Cut up the garlic and anchovies very fine, and bash together with the salt in a mortar and pestle, until you have a nice paste
Transfer the paste into a large mixing bowl, and add the egg yolks, lemon juice and mustard. Drop by drop, slowly whisk in the olive oil, and then the Canola oil, until you have a beautifully silky dressing. You can now stir in the Parmesan cheese, and season with salt and pepper, and if you like, some more lemon juice. See these instructions step by step below
Now, make your croutons, and boil your eggs. To make the croutons, tear the ciabatta into pieces, place on a baking sheet, and season with salt, pepper, oreganum and olive oil. Bake for a few minutes, until crispy on the outside, and soft on the inside. Boil your water until a rolling boil is reached, and then add the eggs for six minutes for a rich, soft boiled egg. I like to plunge the eggs into iced water until ready to serve, so that the eggs are perfectly cooked.
Now, to construct the salad. In a large bowl, or on a large platter, toss the lettuce leaves with a bit of grated Parmesan, Caesar dressing and salt and pepper. Now, add your croutons, eggs, and a few shavings of Parmesan. That's it. The most time consuming part of this recipe is the dressing, but it is so worth it! 🍽 🍽
