Okay, okay, so it's not the most South African meal ever... but it is very close!
Ask any Souf Effriken what is one of the most common braai (barbecue) meats, and they will say a lekker piece of Boerewors. Boerewors, directly translated, means farmer's sausage. It is normally a thick, juicy beef sausage, braaied or grilled on the braai. When paired with a deliciously sweet mealie or cob of corn, you have a gorgeously smoky dinner.
It's super easy to prepare, and my recipe below is for on the stovetop, but if you can, grill both corn and sausage on an open fire, and enjoy the smokiness!
INGREDIENTS
serves four
- 4 or 5 Cloves of Garlic
- 2 Large Onions, Halved and Sliced
- 1 t Cumin
- 1 T Chili Flakes
- Lekker piece of Thick Boerewors, or closest beef sausage you can find
- 6 Hotdog Rolls
- 6 Cob of Corn
- Small Bunch of Rocket/Arugula for Garnish
- T English Mustard
METHOD
Heat your pan to a low to medium heat, and melt a bit of butter. Add your onion, cumin and garlic, and fry softly and slowly until caramelised. This should take about twenty minutes. Don't forget to add quite a bit of salt, as this helps soften the onions. Once lovely and brown, set aside in a warm oven to keep warm.
Fry your sausage on quite a high heat, turning constantly until cooked through and crisped nicely.
If needed, add a bit of olive oil and turn your pan up high as possible. Fry the corn until blackened, turning often, about five to ten minutes. Once sufficiently blackened, add half a cup of water and close the pan's lid. Steam your corn for a few minutes until crisp and cooked well.
Spread your roll with a bit of mustard, pop your sausage in, and top with caramelised onions and rocket. Add a dollop of butter to your corn, and garnish with a few chili flakes. Sriracha goes exceptionally well with dish.
