Eggplants baked with tomatoes and cheese
Ingredients
- 2 eggplant;
- 3 tablespoons of olive oil;
- 4 tomatoes;
- 150 g of mozzarella;
- ¼ a bunch of basil.
Preparation
Cut the eggplants along in half. Pedicels with vegetables can not be cut. Put the eggplants on the baking tray with the skin and pour olive oil. Put the oven in a preheated oven to 200 ° C for 25 minutes, so that they soften.
Cut the tomatoes and mozzarella into slices. Take the eggplant from the oven, put the tomatoes and cheese on them. Bake for another 5 minutes until mozzarella melts. Before serving, decorate with basil leaves.
