Hey everyone, last night I decided to make homemade chicken noodle soup. I started by making my own chicken broth, to do this you must boil a whole chicken in a pot of water for 1 hour and 30 minutes. Next, prepare the vegetables, I chopped 1 white onion, 15 garlic cloves, and 2 stalks of carrots. Then, roast the onion, garlic, and carrots together with some olive oil for 15 minutes, it brings out a great flavor. I also prepared celery and kale, you can chop all of these ingredients to your preference depending on what type of texture you are looking for. Lastly, just add all of the ingredients to the broth, you can either take the chicken bones out or leave them in. Allow the soup to simmer for 2-4 hours, the longer the better. Enjoy!
