I've been so interested and hooked up after my first trial of making a Sauerkraut. As I said on my previous blog, today I will make a sauerkraut menu and adding a Filipino twist with it.
Pancit Bihon are made of cornstarch and water and form into noodles and dried. This is one of the classic dish we served at any occasion through out the year. It is composed of vegetables, meat and some seafoods.
Some of the basic ingredients are chicken stock, shreded chicken meat, liver, green beans, carrots and cabbage. Other special version of this got some quail eggs, shrimp and even pork meat with some fats which I think that it is a flavorful and colorful food to eat and try.
So basically, I add my fermented cabbage (sauerkraut) as a replacement for an ordinary cabbage. I knew that the tangy and sour taste of sauerkraut will enhance my pancit bihon guisado. It is like I add calamansi extract into.
Servings: 2-3 persons
Ingredients:
250 grams of Pancit Bihon
4 cloves of garlic crushed and chopped
1/2 of sayote cut into small cubes
Atleast 200 grams of sauerkraut (or more)
Dried Shrimp
Soysauce
Salt to taste
Water
A Tbsp of vegetable oil
Instructions:
- Drain sauerkraut and set aside until needed. This has been 7 days on fermentation and it is perfectly aged.
- Cut shrimp into half using scissor and cut sayote into small cubes using knife. You can add more if you wanted too. Set aside.
- On a frying pan saute garlic, dried shrimp and sayote. Add some salt while sauteing it for few minutes.
- Add on water atleast 2 and half cups, 1/4 cup of soy sauce and let it simmer for 2 minutes or until sayote is quite cooked.
- Then add the bihon and continue to stir it until the bihon absorbed the liquid. If the water was a bit few, add more if needed.
- Stirring occasionaly is the key to cook the bihon evenly. Add salt and preferred seasonings. Adjust according to your preference.
- At this point add sauerkraut and mix it with bihon. Allow all flavor to combine on each other. This will take 3-5 minutes or until the sauerkraut was initially cooked. Serve while still hot.
I will boast that this might be the very first Pancit Bihon Guisado that includes Sauerkraut. It is more healthier and more cheap than the usual pancit bihon guisado. Hope you could try this at home with your loved ones. Share me your thoughts... Thanks!
