Valencia has such a great offer of restaurants, coffee shops, take away and street food that one can spend a lot of time without needing to cook.
But, both me and love cooking and we enjoy having a peaceful, cozy lunch or dinner in the privacy of our current home.
And since we are 2 minutes away from one of the most beautiful and rich markets in Valencia, the Mercat Central, we decided we will take advantage of its resources and of our basic kitchen utilities.
So yesterday, I made a quick lunch for both of us.
Nothing fancy or difficult to make, just a simple omelet with onions and red bell peppers and sauteed asparagus in a dash of olive oil and garlic. For the salad, I just chopped some tomatoes (I didn't discover yet a type that I really enjoy, still looking for it) and added some avocado (which so far has been just PERFECT. Raise your hand if you share my joy when you buy a perfectly ripe, ready to eat avocado :).
To make this even tastier I added some fresh basil leaves into the mix, a bit of salt and lemon juice and that was it. The combination of tomato, avocado, and fresh basil is one of my all-time favorites!
We also had a bit of red wine and some local cheese that resembles the parmesan but it's made here in Spain.
This was one of the few gluten-free meals I had since we arrived here. Although it's quite easy to find vegetarian and vegan food it's quite a challenge to eat without gluten when on every corner there's a Panaria or Pizzeria or another type of restaurant that sells amazing pastry, pizza, and other delicious food.
So I've been eating quite a lot of glutenous foods since arriving here, I'm now making an experiment to see how I feel when I introduce it back into my diet. So far, so good.
