So lately I've been trying to adapt/reinvent a few of the recipes I've been cooking in the past, meaning before I found out about the histamine allergy thing.
One of these easy, delicious recipes is the energy balls. I used to make them with dates and cocoa. But now these are forbidden, because high in histamine.
This lovely, cloudy afternoon in Bucharest I took about half an hour to scour the Internet for energy balls recipes, that are vegan and low histamine. Of course I watched many and then I mixed and matched based on my inspiration and on what I had at hand in my kitchen.
I like today's version (so does ;) because they are not too sweet and are super easy to make. Of course you can add more or less of any of the ingredients according to your taste, this is just my suggestion.
Ingredients
1/2 cup soaked for a few hours & drained almonds
1 cup desiccated shredded coconut
3 tbsp chia seeds mixed with a bit of water until it becomes like a jelly
2-3 tbsp hemp seeds
2-3 tbsp carob powder
1-3 tbsp sweetener of your choice. I used honey, but you can use agave syrup or something else.
a pinch of salt
2-3 tbsp tahini paste
2-3 tbsp coconut oil
2-3 tbsp vegan milk of your choice
desiccated coconut & sesame seeds for decorating
You need a food processor to first shred the almonds. Then pour everything else in and process until you get a thick paste. If it's too dry, add a bit of vegan milk. If it's too liquid add more coconut flakes or carob powder.
Then form small balls with your fingers and roll them in either sesame seeds or coconut or any other ingredient of your choice. Keep in the fridge in an air tight container. Eat as a snack or when you crave something sweet.
