This Sunday was all about sharing and simplicity. We had exactly 2 drumsticks left in the freezer and about 8 potatoes. Half already went bad, so that's leaves four potatoes. I also received a bag of spinach from my mom on Thursday and thought that would all go well together.
Sometimes you just want to throw a bunch of things in a pan and or boiling water and just let it be, without complicated steps, order or having to watch stuff. So that's exactly what we did. I also got some lemons from a friend on Friday, so those had to be incorporated somehow.
Dash Out!
Co-Chef Hive account@tanjakolader was on potatoes and rice. This is because I don't eat rice each day like most rice-zombies here. The potatoes are just boiled in a bit of salty water until soft and voila! And if you don't know how to boil potatoes or cook rice, you need to evaluate your life choices, or consult uncle Roger.
I seasoned the two drumsticks with some salt, lemon-pepper seasoning, cayenne pepper powder and dried oregano and then browned it in a pan with a mixture of butter and olive oil. After the chicken was browned I added garlic. And of course the lemon had to be used, so I sliced one up and threw that in there as well. Some sugar to balance out the sour and that was done. This was the most cooking for the day and everything else was super simple.
The spinach was then simply steamed with butter, garlic and salt, which enables it to retain it's own delicious flavor.
