It feels a bit weird to write about a winterly kale salad that I put together a few weeks back in Germany, while now enjoying over 30 degrees Celsius in Kuala Lumpur surrounded by exotic fruits like mangosteen and jackfruit. Have you ever thought about the fact, that eating local and seasonal foods helps you to get exactly the nutrients that you need in your current location? Â
No wonder that the winter veggies like kale, parsnip or beetroot are especially great immune boosters for keeping you healthy in the cold and that juicy fruits like strawberries or watermelon are mostly just available in the summer months to give you the refreshing kick during the warm days. Â
Therefore I prefer to rely on the local fruits and veggies for my colorful meals - instead of kale and apple salad like last month, I now find bok choy and water spinach in my green dinner salad. Well, in case you are home in the Northern hemisphere, kale and apples might be exactly what you are munching on these days. Here is how you can deliciously fill up your body with these nutritious winter foods...
Creamy apple-ginger hummus
For the salad dressing, put the following ingredients into a high bowl and blend with your hand mixer until is becomes a homogenous, creamy hummus.Â
- 3 medium organic applesÂ
- 2 tbsp cashew butterÂ
- 1 tbsp nutritional yeast
- 1 thumb fresh gingerÂ
- 1 small red onionÂ
- 1/2 stalk celery Â
- Herbs of your choice
- A bit waterÂ
Normally, the sodium-rich celery adds a great salty flavor so that you can easily leave out any additional salt in here. Make sure that the cashew butter is not roasted and only contains cashews - to be creamy and flavorful no nut spread needs any sugar or oil in it.
Winterly, crunchy kale salad
For the salad mixture, chop the apples in small pieces or grate them if you prefer a finer texture. I always like bigger apple pieces for the certain crunch on my plate and the kale should be chopped quite finely so that it becomes a bit softer.Â
I once stumbled across a great advice for getting the seeds out of the pomegranate without your kitchen looking like a murder scene afterwards - I think I saw it in an Instagram story by . Cut the pomegranate into two or three pieces and then put them into a bowl of water. Remove the seeds under the water so that they float peacefully in there until you drain them.Â
- 1 pomegranateÂ
- 3 medium organic applesÂ
- 5 big organic kale leaves Â
- 1 parsnipÂ
- 1 tbsp grated walnutsÂ
A little side benefit - if you shop local and seasonal produce instead of chasing all the exotic imported goods you are not only supporting your local famers but also avoid unnecessary environment pollution due to the long transport ways from overseas. Therefore you can not only do something amazing for your body, your community as well as mother earth are also profiting from your conscious buying decision.Â
