Recipe: Zarda Polao
Elements:
2 cups potato rice, basmati or kalijira
1 cup sugar
1/3 cup ghee or butter
2-3 cinnamon, each about half an inch each
4-5 small (green) cardamom
3-4 cloves
2/1 cup orange juice
2 cups of water
Little orange color (optional)
Little saffron
Pistachios
Method:
1. Mix one tablespoon of water and mix it with saffron.
2. Add 2 cups of orange juice cup to 2 cups of water and add it. Add orange color.
3. Add rice and keep it in the stove until it is boiled.
4. Spread the rice with a straw on a dish.
5. Add a pane sugar and the remaining 1/2 cup of orange juice.
6. Add cinnamon, cardamom and cloves.
7. Keep butter / ghee and stirring until sugar or melted.
8. Mix well with rice, saffron water and mix well.
9. Turn off the oven when water is dry.
10. Spread a jaradha on a dish so that it is neat.
11. Serve with small pieces of Morobba and pest nut
