Mommy F sais, Carrot is too expensive now, she likes carrot fritters and seriously, that's the only dish that I think is okay for her. There's really just a lot of fish that is bad for her, aigoooo. Carrot Fritters is oily sure but we're using a palm oil, and I don't really use much of it so I think it is still a lil healthy.
But anyways, Mommy F wants to stop using carrot for a while. So I suggested to just use Squash. I remember Okoy, one of the main ingredients for that is Squash and some other veggies. But that one has shrimp and mine doesn't have it. Not sure too what they use for the batter so this one is just Squash Fritters, my version.
Here's the ingredients: half kilo of quash, flour, water, cooking oil, MSG, salt, pepper, onion, garlic, and to add more color and for extra health benefits, I added Malunggay leaves in it.
I used a grater to grate the squash, its much better doing that than cutting it. And in one bowl, I prepared all the dry ingredients, mix them altogether and made a batter out from it.
After that is putting all the garlic and onion and the seasonings. I also added the Malunggay leaves and mix them well
And lastly, I add the grated squash and mix it well as well. I had to add flour in it little by little as I want to achieve the consistency I want for the batter mixture
...mix and mix and mix it! I actually didn't put a lot of flour in it, you can see it right? It is not that covered in flour. What I want is just enough batter to create a patty like texture forw it. Ahhh, make sure to taste test it too if it has enough taste or if it's lacking on something..
And so it is frying time.. see, I didn't use much oil in it. Just enough to fry the other half.
Anyways, I made it a spoonful one, not too big or small. Ahhh, if we have big mouth, this can be finish in two bites. Nom,.nom
Here's the crispy squash fritters, coz its all flour, it is really crispy. I didn't put egg in it because egg us not good for Mommy F. Still, the outcome is great even without it, happy me ♪┌|∵|┘♪
To be honest, I only tried Mama's squash fritters before, it is not even grated, its good, she even put shrimp in it. So, I am really happy that I succesfully made it and I just discovered that squash is really the best when it comes to fritters. Though it is crispy outside, but the inside is soft and I am not sure if it is how I seasoned it but I think it is so savory. I love it. And I got complimented by Mommy F, yipeeeeee, lol.
Carrot is also good but if I will choose between the two, squash is my best pick for it. It just hit differently. Have you already tried both in a fritters? If so, what's your favorite between the two?
