Its a good thing I already planned yesterday my lunch today. You see, I decided to buy potato because its been a long time already since I last eat a dish with lots of potato in it. Although Batchoy has it, but there's really not much so I can't enjoy it to the fullest. At first I want to sautee this potato with hotdog and banana ketchup but I changed my mind. In my head I should cook the hotdog and potato separately because I can save more with that, haha. Good thing I thought about that. And another thing, Mommy D visited her sister in Bulbugan so its just me and Mommy F here, I can't just leave Mommy F alone in the store. So yeah, it made me feel good coz of this luck I have today. And so, with this two ingredients, I will make potato omelette but with Malunggay leaves to make it a lil healthier, sadly I don't have garlic, huhu.
I usually boil my potato whenever I make potato omelette but this time I stir fried it with just a bit of oil and a pinch of salt. Just a lil bit and enough to cook the potato. Yep, I cut them into smaller sizes of cubes.
While waiting for the potatoes to soften a little, I took care of the malunggay and pick every leaves on its stem. I also crack two eggs and put salt, msg, and ground pepper in it
I just beaten the egg and mix the malunggay leaves. While i'm doing that,I checked the Potatoes and its ready. And so, without cooling it down, I put it immediately in the beaten eggs.
By the way, i'm in the middle of preparing when I suddenly feel so hungry. Good thing I have toasted sliced bread that I bought the other day in the market, crispy and with margarine and sugar on top. Some will call it Butter Toast, but this one used Margarine so I should call it Margarine Toast no? Hehe. And with this, I am once again fueled with more energy, lolol
Going back to our recipe, before moving the potatoes, I sauteed the garlic with the potatoes just to give it a nice smell to it
And there we have it, its ready for frying. The Malunggay leaves really put a nice color into it no?
I just cook it like how I made omelette. Because I don't want it with too much oil, I didn't put much of it there, you can see it? Despite the small amount of cooking oil, it didn't stick to the pan, lucky \(o)/. The secret? Just make sure that the pan is hot when you put the oil. Anyways, cooking this doesn't require much time. We flip it after one minute
Tadaaaaan, and it's done! What do you think guys? Do you want some? UwU. I actually live how I cook my potato, not too hard, not too soft either, just like how I want it. ( /ω)/♪♪
Yum, yum, I ate less rice today because of this Potato Omelette. Just one of this is already fulfilling you know ୧(^ 〰 ^)୨
And after a nice and heart lunch, next s a good dessert. Its a Polvoron, this one cost me 5 pesos and it has Pinipig in it, yum, yum! Some lady go house to house to sell her sweets including Polvoron and Mommy D bought a pack of it. 12 pieces for 50 pesos. Polvoron really is addicting no matter who make it, as long as its good and sweet
