Hello my dear Hive friends,
Greetings from Sri Lanka.
One of the healthiest village vegetable is my preparation today. It is Lotus Root Dry Curry.we call it in sinhala Nelum Ala.
Ingredients
200 Gr Lotus Roots
1/4 B.Onion chopped
1 green chilli chopped
1/2 tomato cut into pieces
20 nos curry leaves
2 pieces pandon leaves
1 tea spoon curry powder
1/2 tea spoon roasted curry powder
3/4 tea spoon salt
Dash of tumaric
150ml thick coconut milk
150 ml thin coconut milk
2 table spoons of oil
Method
First wash the lotus root well.cut it into pieces and put in a pan as shown in the picture.
Add dash of salt .after that add water to cover the pieces and keep it on the fire.
When the water is reduced and its cooked well take it down.Now add B.Onion,green chillies, some of curry leaves and pandon leaves.
Now add curry powder, roasted curry powder, dash of tumeric and balance salt.
Add thin coconut milk and mix it well and keep it on the fire again.
When the gravy is reduced add thick coconut milk and mix it well.
Now add pieces of tomato and keep it for few minutes on the fire. Then transfer it to another bowl.
Pour two table spoons of oil into the pan.When the oil is heating add balance curry leaves.
Finally add lotus root curry and mix properly. Keep it for few minutes on the fire and take it down.
Now its ready to serve.

This is very delicious and very healthy curry. It includes dietary fibre, vitamin B and C, Iron,Zinc and minerals. Lotus Root good for digestion, weight loss, lowers blood sugar levels and regulates blood pressure.
