I had a few errands to run downtown today and I didn't have enough time to cook. As soon as I finished, I got to the supermarket to find something that didn't need much time and effort to cook, because Trumpman would be home about an hour after me and he would be hungry!! After a quick look at the butcher's fridge I asked for some soutzoukakia (minced meat with spices) and also bought a kilo of beef for another day.
I got home and quickly got to the kitchen right after putting Little Man in his cot by my side. The poor thing didn't have as much sleep as he wanted to in the morning and fell asleep with me singing while cooking. I quickly turned the oven on and put my soutzoukakia inside. Right after that, I started peeling some potatoes to make some fries go with the meat. I also made a quick soup with zucchini, carrot, potato and minced beef for Little Man. Luckily, I had half a packet of a mixed greens salad, so I chopped half a scallion, some parsley and dill, a mustard and balsamic vinegar dressing with olive oil and our meal was ready in less than an hour.
By the time the Big Man of the house came, I had already served our food.

Some fresh bread and a spicy feta cheese dip. Little Man was also allowed to have a fry and of course he had a few bites of his mommy's mince that he seemed to enjoy!
