Eating out is so much easier these days it seems. It makes for a quick, easy meal. Our society wants it HOT and NOW! We have difficulties slowing things down to enjoy the daisies. So today I want to share with you a few quick, simple ways to prepare a healthy lunch that will make any fast food look like chopped liver.
Our family is apart of a local CSA (Community Supported Agriculture) program. Each week we pick up our produce... it's like getting a surprise present every week! We receive what is available according to the season we are in. Every week is a different selection of fruits, veggies and herbs. The minute I open the boxes I pretend I am on the "Iron Chef" tv show... "Chef Sending-Arrows, you have 30 minutes to prepare a healthy, well balanced meal for your family with the following ingredients... GO!" Not only am I preparing a super healthy meal for my family, I have peace of mind knowing where the produce came from and there are not any harmful pesticides or chemicals on them.
Every morning I wake up and make my husband his lunch to take to work. He ADORES me! :) Here is what is on the menu today for him:
Chopped Salad: spinach leaves, carrots, broccoli, beet, feta cheese, hemp seeds, and local oil and balsamic vinegar as dressing.
Raw almonds, raw cheddar cheese, figs, and dates.
Lunch is served! It took me around 10 minutes to chop the salad up, pour oil and balsamic vinegar, and put the second bowl of protein and fiber together. Wham bam, thank you ma'am! This is a complete meal for those who can only spare 10 minutes for prep. I hope this inspires you all to make better meal choices and keep your family healthy!
