This is a delicious and healthy main dish with a little spice to kick it up a notch.
Please begin the preparation several hours before serving or one day ahead to marinate the chicken.
2 whole medium chicken breasts
1 Tbsp. soy sauce
1 Tbsp. dry sherry
1/4 tsp. fresh garlic
1/8 tsp ginger
dash pepper and salt
vegetable cooking spray
1/2 head of small cabbage (Chinese or head cabbage)
2 Tbsp. diced pimento
1 Tbsp. green onions
Take each individual breast and cut in half and cut each half into 6-8 chunks.
In a bowl, combine chicken, soy sauce, sherry, garlic, ginger, pepper, and 1/2 tsp. salt.
Cover and refrigerate at least a few hours or overnight to marinade.
Spray skillet with vegetable cooking spray and remove chicken with a spoon (leaving the soy sauce marinade mixture).
Cook chicken 10 minutes turning frequently until tender.
Cut cabbage crosswise into 1 1/2 inch pieces.
In the same skillet, cook cabbage, bean sprouts, reserved soy sauce mixture, and 1/2 tsp. salt for a few minutes.
Return chicken to the skillet and garnish with pimento and thinly sliced green onions.
