I love the fresh vegetable selection for Vietnamese Pho. I generally put in one slice of jalapeno for a dash of spicy flavor (more seems to make it too spicy). I add all the bean sprouts right away as the heat from the Pho will cook it to perfection while you are enjoying the soup. I squeeze one lime into broth also as well as the mint if it looks fresh. I also add a squeeze of the plum sauce for additional flavor.
