LA RECETA / THE RECIPE
250-300 gr de grosellas.
100 gr de azúcar blanca.
Agua potable para cocinar, enjuagar y licuar.
Licuadora, colador, olla de acero inoxidable, paleta de madera o plástico, jarra, un bol para lavar y vasos.

The cherries weighed a total of 315 grams, a little more than the necessary amount.
EL PROCEDIMIENTO / THE PROCESS
Las grosellas crecen en racimos, no siempre las abejitas polinizan las flores uniformemente, por eso unas crecen antes que otras, pueden ver en la última fotografía la diferencia entre dos frutas del mismo racimo.
Currants grow in clusters, the bees do not always pollinate the flowers uniformly, that is why some grow before others, you can see in the last photograph the difference between two fruits of the same cluster.
After having selected and cleaned them, I proceed to place them in a stainless steel container or pot, add a liter of water and a teaspoon of salt. Salt is necessary because it is used to extract excess acidity from the currants. This acidity is also corrosive, and must be extracted from fruits because it can erode tooth enamel; hence it is necessary to boil them in a stainless steel, pewter or glass pot. They are boiled for a period of 7-10 minutes, this also serves to make them more digestible.
Then I proceed to remove them from the heat and strain them. I reserve the resulting liquid, because although it is not edible, it is very useful for removing ceramic and sanitary stains. I rinse them very well, stirring them with a wooden paddle, in order to remove the salt as much as possible. I strain them and this second water I discard.
I place them in the blender glass, add a liter of water and proceed to blend for 1-2 minutes. Then I strain them to extract the seeds, and sweeten the resulting juice, and that's it! I also wanted to tell you that this juice has the peculiarity that as the days go by it acquires a better flavor, and this is due to the fact that it undergoes a slight fermentation process; which is why I usually prepare several liters and reserve them in the fridge; I have consumed them on the fifth day of having prepared it and it is really exquisite. They already know that they can prepare this delicacy, which is very healthy, since it also serves as a cleanser, as it has diuretic properties, which increases the frequency of urination.
