As mentioned in my first entry for this week's SSC, every time I purchase roasted chicken, I always ended up having leftover white meat. Therefore, I am on a mission this week to find the perfect way to use up those leftover white meat!
My second entry of the week was inspired by butter chicken and I wanted to make a Better Butter Chicken Sandwich Wrap with cooked roasted chicken breast.
Again, I found white meat to be dry and blend. Therefore, I was determined to find a way to add tons of flavours as well as moisture into the white meat. And, this is what I came up with: Better Butter Chicken Sandwich Wrap.
The ingredients are as follows:
- butter, onion, garlic, ginger, chili powder, turmeric, curry, cinnamon, crushed tomatoes, tomato paste, maple syrup, salt, pepper, roasted chicken breast, milk, sour cream, cilantro, tortilla wrap
The steps are as follows:
- cook onion and garlic in butter for about 5 minutes
- add ginger, chili powder, turmeric, curry and cinnamon and cook for 2 minutes
- add crashed tomatoes, tomato paste, maple syrup, salt and pepper and simmer for 10 minutes
- add chopped roasted chicken breast, milk, sour cream and simmer for another 5 minutes
- stir in cilantro
- place butter chicken in the centre of the tortilla wrap and enjoy
P.S. I was cleaning out my fridge and found a red pepper that I needed to use, so I chopped it up and throw into the butter chicken as well :p
This wrap is so flavourful and honestly I was surprised!! I think the acidity from the tomato breaks down the toughness of the white meat and gives it a very very moist texture. This is what I called a perfect meat sandwich!
Also, if there is such thing as winter sandwich, I think this is the perfect one. Due to the hot spices I added, this sandwich really helps me to stay warm on a cold day!
