As mentioned in my previous sandwich post, I have a huge craving for Chinese Food lately. Shortly after my Blueberry Cheesecake Wrap, I was starting to feel hungry AGAIN (sigh)!
So, I quickly boiled some chinese egg noodles, chopped up some onion, green & red peppers and made a noodle stir fry with dark soy sauce.
Then, all of a sudden, it dawned on me that there was this Chinese wrap I had in New York a few years ago that were made with Chinese noodles. Therefore, I decided to make a sandwich out of the noodles instead of eating them as its.
Since I already have the home-made wraps made from earlier, I simple stuffed my yummy noodle stir fry inside, brush with olive oil and baked in the oven for 15 minutes. While I waited, I also made a golden yellow curry turmeric coconut dipping sauce at no time.
Why curry sauce? Well, I figured, there are the colour green and red in the sandwich, so why not make something yellowish. LOL.
I love this sandwich as it reminded me of the good old days when I was a free woman who got to travel all over and eat all the fun food at different corners of the world.
Now that we will soon be 'knocked up' (I was told this is bad english language, oops), not sure if we will have to wait until our boy to grow up first before husband and I could travel?!
Oh wait, is that a myth, who says you can’t travel with young children?! Oh no no no, I am going to drag my boy with us any where we go, whether he likes it or not. Haha, mama and papa need to enjoy life as well after all.
