Vada Pav is a famous snack from Maharashtra, it’s like the bread and butter of the Maharashtrian states especially Mumbai. You can find a person selling vada pav on a stall every 200 meters. It’s a very simple dish but extremely delicious. It comes with spicy coriander and mint chutney and fried green chilli.
The vada is made using mashed potatoes with a sprinkle of garlic and ginger, curry leaves and mustard seeds. These are then coated with gram flour, fried and put inside cocktail buns. Cocktail buns are small buns, soft and milky. The ones you find in Maharashtra, you will not find elsewhere but some good brands have a decent make these days.

Ingredients
For Potato Mixture

For Gram Flour Batter

Method
Step 1: Boil the potatoes and mash them. Keep aside.
Step 2: In a large pan, heat 2 TBSP oil. Add mustard seeds. Once they start to crackle, add curry leaves.
Step 3: Now add chopped green chillis, chopped ginger and chopped garlic and cook for about 2 minutes until light brown.
Step 4: Add turmeric powder, mix it and turn off the flame.
Step 5: Add this mix to the mashed potatoes, add chopped coriander and salt and mix well to make a consistent batter. Make small balls of the batter.
Step 6: Take gram flour in a bowl, add salt and water and make a thick paste (should not have a flowy consistency)
Step 7: Heat oil in a pan. Dip each potato ball in the batter and deep fry.
Step 8: Similarly, dip some of the green chillies in the batter and deep fry.
Step 9: Cut the pav (breads) into 2 halves, apply mint chutney and dry garlic powder on each side and place the vada (fried potato ball) in between. Close the pav with the other side of the bread.
Step 10: Serve hot with mint chutney and fried green chillies.
These vada pavs form a great breakfast treat for a nice, rainy Sunday morning.
