Winter is a great time for me to spend extra time doing things out of the ordinary. My son Randy visited from Panama, and he requested white Clam sauce for dinner. I told him that I had just ordered Semolina from Italy and it would arrive in two days. Well, let's just say, we had a great time making pasta together.
I do enjoy making pasta from scratch with good Semolina. Nothing store bought today even comes close to the texture or taste of homemade.
With the Semolina measured out for one batch and the eggs lightly beaten, we were set up to make the noodles.
This little pasta maker was handed down to me from my mother-in-law. I once had an electric one but never really liked it, so I make my pasta with this little hand-cranked machine.
Once I had all the dough formed into small balls, I flattened them out and fed them through the rollers while my son turned the handle. That made it so easy having an assistant on hand. Once all the dough was flat and elongated, we attached the noodle head and fed the dough through.
Normally, I would have taken more photos of the process but working with Randy, I forgot to do so. Once the noodles came through the roller, I tossed them in more Semolina, so they didn't stick together. They dried slightly all afternoon and then it was time to make the clam sauce.
Of course, I had to make garlic toast to go along with the pasta. Squeezing some fresh lemon juice on top and a little Romano cheese, made it so delicious. I thought I would share this with you today. No recipes, just the experience which was so awesome to have with my son.
