How To Make Creamy Basil Pesto Pasta
INGREDIENTS
1 pd. cooked pasta - I used Fettuccini
1 cup diced onions
1 cup diced mushrooms
1 tbsp. minced garlic
1 tbsp. butter
salt and black pepper
2 tbsp. butter
2 tbsp. flour
3 cups cream
2 tbsp. basil pesto
1 cup broccoli florets
dash cayenne pepper
salt and black pepper
1/4 cup parmesan cheese
chopped parsley
In a pan on medium heat add butter, onions, mushrooms and garlic.
Cook and stir for 2-3 minutes. Add salt and black pepper.
Cook and stir for 1-2 more minutes and remove from the heat.
In another pan on medium heat add butter and flour. Cook and stir for 1-2 minutes.
Add cream, turn up heat to bring to boil and reduce to simmer.
Add salt, black pepper, cayenne pepper (optional), pesto and broccoli florets.
Cook and stir for 2-3 minutes.
Add onion/mushroom mixture, chopped parsley, parmesan cheese and fettuccini. Toss to combine and cook for 1-2 minutes.
Add additional pasta water to help thin sauce if needed.
Serve as main dish or as a side dish. Garnish with grated parmesan cheese and parsley.
