These are easy flavorful sweet potato cakes using leftover sweet potatoes. You can add the seasonings that you like. These sweet potato cakes are a great side dish for any meal. Enjoy.
How to Make Sweet Potato Cakes
INGREDIENTS:
2 medium cooked sweet potatoes - peeled
2 finely chopped green onions - just greens
1 egg
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. poultry seasoning
1 tsp. parsley
1/8 tsp. cayenne pepper
1 tbsp. flour
butter and olive oil
Mash sweet potatoes with a fork and add remaining ingredients. Mix well.
In a pan on medium low heat add butter and olive oil. Spoon sweet potato mixture and slightly flatten. Cook on each side for 2-3 minutes until golden brown.
Enjoy.
