The mushrooms that we were after are called morels. They appear in moist soils and need sun to grow... we found them in high altitudes (where no people walk around) in Mount Giona, in Central Greece..

Our harvest was poor as other people had gathered morels before us.. but the excursion was a great experience
Even if the morels are dry, it's ok..once you put them in a plastic bag with others -which are fresh - they also become fresh! Amazing..
To cook the morels, cut them in two vertically, blanch them, remove any scum from the surface of the water and strain them. Then cook them in any form you prefer. This way you remove any bugs that may be hidden.
