This is a vegan dessert with no sugar or unhealthy ingredients. It contains various dried fruits and nuts and is really tasty!
Ingredients: 230gr grated macadamia nuts, 1 cup of grated pistachios, 1 tbsp grated pine nuts, ½ cup of grated cashew nuts. All nuts should be unroasted and unsalted. 20-25 grated dates, 4 figs chopped in small pieces, 1 orange zest, 200gr coconut oil (this time I used pureed coconut, which is more thick and easy to use), 3 oranges’ juice (the juices used depend on the coconut oil texture used; that is if you use coconut oil which is fluid, you will not need the juice of three oranges), 3 tbsp of bio cocoa(try to use biological), ½ tbsp of melted bio cocoa butter (try to use biological), 1 small cup espresso coffee (optional), 1 small espresso cup of brandy (optional), 1 tbsp of linseed. Also I used 1-2 tbsp of goji berries, 1-2 tbsp of raisins. The dried fruits and nuts used are totally your own choice. Dried cranberries are a very good option
In a deep bowl I put the grated macadamia nuts, pistachios, pine nuts and cashew nuts. Also, I add the orange zest, the cocoa and cocoa powder. Then my natural sweeteners: the dates and the figs. Little by little, I add the liquid or semi-liquid ingredients, like the coconut oil, the espresso cup, the brandy, the orange juice (again the juice depends on how liquid my mixture is. If it turns out too liquid, I don’t put juice of 3 oranges, but of 1). In the end I add the nuts of my preference, i.e. goji berries, raisins and linseed. You may add other seeds or dried fruits.
I place the mixture in (4-5 pieces of) greased proof paper in strips, roll up and put in freezer.
I cut slices or various 'rocky' shapes to serve.
This dessert is really tasty and also easy to store and serve. Whenever I want to eat or serve some, I take out of the freezer one strip and cut in pieces.
It is also rich in ‘good’ fats; that is why you may let yourselves enjoy it with less guilt – well, apart from the brandy shot!
