I do not know how many people have watched the TV show Anthony Bourdain: Parts Unknown. It’s a travel and food show! I love that show and I am big fan of Anthony Bourdain. It’s very sad he left the world this year and I still can’t understand why!!
He went to my hometown in the Sichuan province of China. He loved spicy food too and learned how to cook some of his favorite food there. One of them is called Mapo Tofu!

So today I am going to make Mapo Tofu. Unfortunately I am missing one ingredient which is called sweet potato starch. (There are many different types of starch in Chinese grocery stores, but we usually use sweet potato starch in Sichuan. If you could not find it, you can use any starch instead.) Anyway, put one spoonful of starch mix with a small cup of water to cook with tofu for a few minutes.

他去过我的家乡中国四川省。他也非常喜欢辛辣的食物,而且他还在四川学了如何烹调他最喜欢的川菜。其中一个就叫麻婆豆腐!

所以今天我将要做的就是麻婆豆腐,遗憾的是我家里没有红薯淀粉。(在中国杂货店有很多不同种类的淀粉,但我们在四川通常使用红薯淀粉。如果你找不到它,你可以用其它淀粉来代替)。不管怎样,用一勺淀粉和一小杯水一起搅拌后放进去和豆腐一起煮几分钟就好了。
