Here's the gist of the article if you don't feel like reading the whole thing (though you should, it's interesting!):
Some people suffering from gluten allergies here in the U.S. noticed that they had NO PROBLEM eating pasta in ITALY while on vacation.
The real culprit appears to be the HARVESTING METHOD used by conventional wheat farmers in which they douse the fields a few days beforehand with the herbicide ROUNDUP (or similar herbicides containing glyphosate).

So they're KILLING the plants with CHEMICALS to allow earlier, easier, and more PROFITABLE harvesting. Unsuspecting consumers get to ingest these toxins and it messes with our gut microbes causing digestive issues and who knows what other maladies down the line.
So, the word to the wise is: AVOID CONVENTIONAL WHEAT products even if you don't currently have a wheat sensitivity.
