Greetings to our dear and beautiful Creative Cooking community! 🤗 Happy start to the week!
"That cake made me so happy!" exclaimed my husband today when he ate two slices for dessert 😁 He has a real sweet tooth, and even though we've cut down on sugar, we sometimes allow ourselves to enjoy a treat like this.
A few days ago, our dear neighbors gave us a tray of strawberries. They were truly beautiful, so red and sweet. The first thing I thought of was making this cake. A combination of lemon and strawberry couldn't wait, so I got to work.
The result is a true delicacy: a cake with a crispy top and a slightly moist interior. The lemon flavor and the bits of strawberry in every bite make this cake a 10 out of 10! 👌
Important: This cake is quite dense, therefore, it doesn't contain baking powder.

As always, we'll start by turning the oven on to 180 degrees.
Now in a bowl we add the 3 eggs and the sugar, and beat very well.
Add the melted butter and beat until it is well incorporated into the mixture.
Next, we'll add the flour, sifting it through a sieve. We'll add a pinch of salt and mix.
Now add the lemon juice and zest, mix again until you get a slightly thick and homogeneous mixture.
We pour the mixture into our mold, as I already indicated in the ingredients, try to use a mold a little bigger than the one I used, so your cake will be cooked more neatly and will be in the oven for less time, thank God my cake turned out great but I had to get creative, using a few little tricks.
Now we're going to decorate with our sliced strawberries.
We bake it in the oven for approximately 30 to 35 minutes, always remember to insert the pastry toothpick, it should come out dry to ensure that our cake is ready.
We took it out of the oven, mine came out golden brown, ummmm 😋 we let it cool and unmolded it.
Finally, we decorate with a touch of powdered sugar on top and serve with more fresh strawberries. Enjoy! 🤤
This cake is insanely delicious, no one will be able to resist trying it! Enjoy it with a low-sugar coffee 👌 I hope you're inspired to make it, see you soon 😊
