Dear steemians, today I propose a recipe that you've probably never tried it, its simplicity is amazing. In fact, as often chef Barbieri say, you do not need many ingredients for a good recipe, few and well-combined make stand out more the flavors.. My recipe today is the coffee chicken, I've seen it a time ago and I decided to propose a revision of the dish.

Carissimi steemians, oggi vi propongo una ricetta che probabilmente non avete mai provato, la sua semplicità è straordinaria. Infatti come spesso sostiene anche chef Barbieri, non servono molti ingredienti per una buona ricetta, pochi e ben accostati risaltano maggiormente i sapori. La mia ricetta di oggi è il pollo al caffè, l'ho visto fare tempo fa e ho deciso di proporre una mia rivisitazione del piatto.

Very simple and fast to prepare, put coffee espresso in a pot, add a pinch of ground coffee, a little milk cream and sugary to taste, for the quantities you are free to do as you like, depends on whether you want a sweeter sauce or bitter.

Molto semplice e veloce da preparare, mettiamo il caffè espresso in un pentolino, aggiungiamo un pizzico di caffè macinato, un po' di panna e zuccherate quanto basta, per le quantità siete liberi di fare come preferite, dipende se volete una salsa più dolce o amara.

Mix until the sugar has dissolved completely and the milk cream is well blended. Now you can add the flour a little bit at a time, I used the spelled flour, but it is also good the wheat 00. While you add the flour to a little, mix it with flame, so that it does not create lumps and cook the flour well. When the sauce has reached a good consistency it is ready.

Mescolate fino a che lo zucchero si sia sciolto completamente e la panna ben amalgamata. Ora potete aggiungere poco alla volta la farina, io ho usato quella di farro, ma va bene anche quella di frumento 00. Mentre aggiungete a poco la farina continuate a mescolare a fiamma viva, così da non creare grumi e cuocere bene la farina. Quando la salsa avrà raggiunto una buona consistenza è pronta.

It is now on the chicken, which represents the only small difficulty of this dish, given its cooking, that it should not be overcooked or too raw. I have personally worked a whole chicken to get the chest with the skin, which during cooking helps a lot to not burn it all, but you can ask your confident butcher that prepare for you the chicken.

Ora tocca al pollo, che rappresenta l'unica piccola difficoltà di questo piatto, data dalla sua cottura, che non deve essere troppo cotto ne troppo crudo. Io ho lavorato personalmente un pollo intero per potere ricavare il petto con la pelle, che durante la cottura aiuta molto a non bruciare il tutto, ma voi potete chiedere al vostro macellaio di fiducia che vi prepari il pollo.

On a non stick pot, add oil and rosemary and cook over high heat, add salt the chicken on both sides how much it serves.

Su una pentola antiaderente aggiungete olio e rosmarino e cuocete a fuoco vivo, salate il pollo in entrambi i lati quanto basta.

When you are on half cook the chicken, add some sauce to the coffee and continue to cook until the sauce does make the chicken caramel thanks to the sugar it contains.

Quando siete a metà cottura del pollo, aggiungete un po' di salsa al caffè e continuate a cuocere finché la salsa non rende caramellato il pollo grazie allo zucchero che contiene.
