Ingredients
🧅 1/2 White onion, sliced
🌶️ 1 Red chili, deseeded and julienned
🧄 1 Spring onion, green parts sliced on an angle, for garnish
🧄 1 Spring onion, stems white parts for sautéing
🥒 1/2 Courgette, julienned
🥕 1/2 Carrot, julienned
🛢️ Cooking oil
🍐 1/2 Chinese pear, peeled, cored, and roughly chopped
🧄 2 Garlic cloves, smashed and chopped
🌿 1/2 Knob Ginger, peeled and chopped
🥢 1.5 tbsp Light soy sauce, Lee Kum Kee
🍶 1 tbsp Mirin, Mizkan
🌊 1 tbsp Oyster sauce, Lee Kum Kee
🍬 1 tbsp Brown sugar
🍈 1 tbsp Sesame oil, Amoy
🥩 200-300g Sliced ribeye beef
Instructions
1- Prepare Vegetables and Aromatics:
- Slice the onion into thin half-moons.
- Deseed the red chili and julienne for added color.
- Slice the spring onions, separating the green parts for garnish and the white parts for sautéing.
- Julienne the courgette and carrot.
- Arrange all vegetables on a plate in a layout, ready for easy stir-frying.
2- Make the Pear Marinade:
- In a blender, combine the roughly chopped pear, garlic, and ginger.
- Add the light soy sauce, mirin, oyster sauce, brown sugar, and sesame oil.
- Blend until smooth and well combined.
3- Marinate the Beef:
- Place the sliced ribeye beef in a mixing bowl.
- Pour the marinade over the beef, adding sliced onions and spring onion stems.
- Massage gently to coat the beef evenly.
- Cover with cling film and refrigerate for a minimum of 2 hours, preferably overnight.
4- Stir-Frying Vegetables:
- Heat a non-stick frying pan over high heat, adding a generous drizzle of cooking oil.
- Add the sliced onions and spring onion stems, stir-frying until fragrant.
- Introduce courgette, carrots, and red chili, stir-fry until slightly softened.
- Remove from pan and set aside.
5- Stir-Frying Beef:
- In the same pan, add a little more oil if needed.
- Add the marinated beef with onions and marinade to the hot pan.
- Allow it to cook undisturbed for a minute or two to achieve a char.
- Stir-fry the beef for 2 minutes per side until cooked through.
6- Combine and Serve:
- Return the sautéed vegetables to the pan, mixing with the beef until heated through.
- Serve immediately on a plate.
- Garnish with green spring onions and a sprinkle of sesame seeds.
