Experience a taste of Finland with Perunapiirakka, a delightful potato pie featuring a rustic rye crust and creamy potato filling. This traditional Finnish dish makes for a comforting main course or hearty snack, perfectly paired with a cup of tea.

Ingredients
🌾 5.5 dl Rye flour, a mix of store-bought and freshly ground rye groats
🧂 1 teaspoon Salt
💧 Approximately 2 dl Water
🥔 600 g Potatoes peeled and boiled
🧈 50 g Butter
🥛 1.5 dl Milk
🧂 0.5 teaspoon Salt
🥚 1 Egg
🧈 Small amount Butter for brushing
🥛 Small amount Milk for brushing
Instructions
1- Prepare Potatoes:
- Peel and wash 600 g of potatoes.
- Boil them in a pot until tender. Once boiled, drain the water.
2- Prepare Rye Flour:
- If using whole rye groats, grind them to flour consistency using a stick blender with a chopper attachment.
- Sift the flour into a bowl.
3- Make the Dough:
- Mix 1 teaspoon of salt into the rye flour.
- Gradually add approximately 2 dl of water, stirring until a workable dough forms. Let the dough rest briefly.
4- Make the Potato Mash:
- Mash the boiled potatoes, adding texture with small chunks.
- Add 50 g of butter, 1.5 dl of milk, and 0.5 teaspoon of salt to the mashed potatoes. Mix thoroughly.
- Let the mixture cool slightly, then add in the beaten egg.
5- Preheat Oven:
- Preheat your oven to 275°C (527°F).
6- Form the Pie:
- Line a baking tray with baking paper.
- Spread the dough by hand into a rectangle on the baking paper, creating the pie base.
- Evenly spread the potato mash over the dough, leaving a border at the edges.
- Fold and crimp the dough edges over the filling.
7- Bake the Pie:
- Bake in the preheated oven for approximately 15 minutes until the crust is golden brown.
8- Prepare Butter-Milk Wash:
- Melt a small amount of butter and mix with a splash of milk.
9- Finish and Serve:
- Once baked, brush the crust edges with the butter-milk mixture.
- Cover the pie with another tray to steam and soften the crust. Let it rest for 10-15 minutes.
- Serve warm, ideally with a cup of tea.
