Hello everyone! There are 64 districts in Bangladesh. Each district has traditional food items. Two years ago I visited Bogura district which is famous for Sweet Curd, Mishti Doi in Bengali. The fame of Mishti Doi is beyond Bangladesh. When the experts of Bogura go abroad for work they take curd from here for their colleagues and friends.

I had a training in Rural Development Academy (RDA) on food safety. There we visited the industry where curd is made by the skilled doi maker. We saw the process of making sweet curd. First they take fresh milk of cows. Then they heat the milk untill the milk becomes a two thirds portion. Then sugar and seed curd mixed with it. There are a lot of curd pot made of clay. Before setting the curd the pots are heated for disinfect. Then the pots filled by liquid milk which are ready to set. Then they covered the pots with a large Jhapi made of bamboo.

The curds sets overnight. The next morning the curd become ready to sell. Curd is a source of vitamins, mineral and calcium. The curd and yogurt are full of lacto bacillus bacteria which help us for digesting foods. Every one in our country loves this food. Especially children like curd most. In Bangladesh curd is served as dessert almost every function. I remember that when I was child a kind of sweet icy curd sold in small glass.

Now a days that is not found. Now curd sells in food grade plastic cups, clay cups, plastic bowls or clay pots. Yogurt is sour in taste and it is also popular in our counyry. It is better for digesting than sweet curd. The making process of yogurt is almost the same but no sugar added with it. Would you like to taste sweet curd and yogurt? I think if you taste these you will be a fan of these dessert.
If you ever come in Bangladesh you must taste mishti doi and tok doi (yogurt). Would you like to miss a nice taste! Oh! You can make curd in your home also. The processing of making sweet curd in home is available in internet. My mom often made it for me in my childhood but there was no telephone or mobile phone in our house. You can also try this at home.
