Spicy Moringa Leaf Sauce: A West African Delight
Embark on a culinary journey with this flavorful Moringa Leaf Sauce, a classic dish hailing from West African cuisine. It beautifully marries the earthy taste of moringa leaves with the smoky flavor of roasted fish and the fiery kick of peppers, creating a savory, hearty sauce perfect as a main course or alongside starchy staples.

Ingredients
🌿 3 bunches Moringa Leaves fresh
🐟 2 pieces Roasted Fish deboned
🌶️ 6 Red Chili Peppers fresh
🌶️ 11 Red Habanero Peppers fresh
🧅 1 medium-sized Onion Bulb fresh
🧂 4 seasoning cubes
🧂 1/2 teaspoon Salt approximate
🛢️ 1/2 cup Vegetable Oil approximate
💧 Water for washing and boiling
Instructions
1- Prepare the Moringa Leaves:
- Pick the moringa leaves from their stalks and place them in a bowl.
- Wash the leaves thoroughly with water twice, draining the water after each wash.
2- Boil the Moringa Leaves:
- Transfer the washed moringa leaves into a pot, cover with water, and bring to a boil over medium heat for 6-7 minutes.
3- Strain and Squeeze:
- Drain the boiled leaves using a colander. Rinse with cold water to cool.
- Firmly squeeze out all excess water from the moringa leaves. Set them aside on a plate.
4- Prepare Aromatics and Fish:
- Wash and grate the chili peppers, habanero peppers, and onion.
- Debone the roasted fish and set aside.
5- Sauté the Aromatics:
- Place an empty pot on the heat and add vegetable oil. Allow it to heat up.
- Add the grated pepper and onion mixture, stirring well. Fry for 1 minute.
6- Incorporate the Fish:
- Add the deboned roasted fish to the pot. Mix thoroughly.
7- Season the Sauce:
- Add salt and crush in the seasoning cubes. Mix well.
- Allow the mixture to fry for another 2-3 minutes.
8- Combine with Moringa:
- Fold the squeezed moringa leaves into the sauce base, mixing until even.
9- Final Touch and Serve:
- Remove from heat and transfer to a serving plate.
- Enjoy this sauce with starchy sides like rice, fufu, or pounded yam.
