Milk Mix (Secret Ingredient)
🥛 4 tbsp Nestlé Nido Instant Full Cream Milk Powder
🧈 4 tbsp Khanum Ghee
🍬 2 tbsp Sugar
🥛 1 cup Hot Milk
🌼 1 tsp Saffron
Rice Seasoning
🧂 1/2 tsp Salt use 1 tsp for more flavor
🏺 2 tbsp Cooking Oil
🍎 1 tbsp Vinegar Apple Cider, brand not specified
Biryani Layer/Garnish
🥛 1 tbsp Nestlé Nido Instant Full Cream Milk Powder
🍇 1.5 tbsp Golden Raisins
🥜 1.5 tbsp Ground Cashew or Almond
🍑 10-12 Dried Plums Aloo Bukhara
🌿 Fresh Chopped Coriander

3- Fry the Onions (Barista):
4- Sauté Spices and Aromatics:
5- Cook the Onions and Aromatics:
6- Add Mutton:
7- Add Ketchup and Season:
8- Simmer with Yogurt:
9- Prepare Basmati Rice:
10- Boil the Rice:
- In a pot, boil water with salt, oil, and vinegar.
- Add rice and cook for 6 mins.
11- Drain the Rice:
- Drain rice ensuring it is firm but slightly softened.
12- Assemble Layers:
- Line cooked mutton at the pot's bottom.
- Layer potatoes, sprinkle milk powder, cashews, raisins, plums, and some fried onions.
13- Layer Rice and Garnish:
- Add the rice.
- Pour the milk mix.
- Sprinkle remaining onions and coriander on top.
14- Dum Cooking:
- Seal the pot with foil and cover.
- Place on a preheated griddle.
- Cook on high for 5 mins and low for 20 mins.
- Rest for 20 mins before serving.
