Today I had the delightful experience of going with a Colombian friend, Mrs. Marianella Arboleda, to buy fish by the beach, to prepare a special recipe. Upon arriving at the port, she met a friend, who invited her to go out on her boat to catch lobsters. We immediately embarked and went out with the fishermen, while the Lady, Marianella was talking with her friend, I enjoyed the soft breeze of that spectacularly blue sea.
We arrived at the fishing site and a man, already of advanced age, who had been preparing previously, jumped into the water, without wearing a diving mask, snorkel, or other equipment that divers normally use.
Mr. Betho, as the Friend of Mrs. Marianella is called, explained to us:
”Wilfrido - The eel", is a veteran fisherman, who since very young has exercised that job, because he was born on the shore of these beaches; and he is one of the few men I know who does lobster fishing, without using any implements or equipment like the others.
Within minutes of being submerged and coming to the surface, the Lord "Wilfrido - The eel", took out a very good size lobster, to the joy of my Friend, Mrs. Marianella. The fishing lasted approximately one hour and a half, in total there were 20 lobsters, as well as several species of fish, which were caught by the other fishermen, with a net and others with fishing rods. During that time we were enjoying some cocktails prepared by Mr. Betho.
Lobster is one of the treasures that our Caribbean Sea has, always fishing on the coasts, on the islands of our Caribbean Sea and we use it in many preparations, we make it in ceviche, we make it on the grill, We make soup, it is made in coconut sumo, it is made in stews, it is eaten raw. Said Mr. Betho.
"Wilfrido - The eel", began to scale and clean, the fish they had taken out.
We were told by Mr. Betho that the fishermen usually sold the big fish, since the small fish, they took them to their homes, to be used for the sustenance of their families.
Normally they eat them with yucca and bananas, among other companions. This is one of the most delicious secrets of fishing, when the famous sancochos are prepared. Said Mr. Betho
Then Mr. Betho, who is an expert and one of the best connoisseurs of the lobster, since he has a restaurant on the shore, suggested to Mrs. Marianela:
What do you think, if we prepare a delicious Lobster Ceviche, with tamarind sauce?
My mouth was water, nothing more than imagine that dish.
Excellent idea answered, Mrs. Marianella. This is how I will prepare the "china" Alfonzina, the special dish that I promised when we went to the market on the beach.
Chinese: This is how the Colombians, affectionately say, the Youth in Colombia.
Immediately Mr. Betho invited us to go to the boat's kitchen, where I was amazed and surprised by the beauty and well-equipped that boat was.
The three of us got down to work. Mr. Betho, he took out all the Ingredients and Mrs. Marianella from the fridge, and I proceeded to chop all the Dressings.
Mr. Betho took a lobster about a kilo, and put it to cook for 15 minutes, then placed it in a glass dish with water and ice to stop the cooking. I squeezed, 06 lemons and I reserved the juice in a cup, piqué minced part of the dressings, next to Mrs. Marianella:
sweet pepper
Red pepper
green onion
purple onion
yerba good
oregano
and cilantro.
Tamarindo and Limón criollo, are very Caribbean products for the preparation of this ceviche, said Mr. Betho.
Mr. Betho, he took the lobster, and chopped it into pieces and proceeded to mix it in a Glass Bold with all the chopped ingredients, then he put the lemon juice, continued stirring, and then add it, pepper and tamarind juice, which Mrs. Marianela had been responsible for preparing.
Mr. Betho, explained that this dish was one of the favorite dishes of the clients of his hotel since we were in a temperate climate, so it was very consistent with the heat, in addition to that he served it with tamarind and ginger ice cream, which made it even more refreshing.
Then we let it rest for about 15 minutes and served it.
Friends, what a delight, this Ceviche, a whole explosion of flavors!
Mrs. Marianela and Mr. Betho, enjoyed the face of satisfaction that I put when I tasted it. Then Mr. Betho told us:
I want you to go to my restaurant tomorrow, to prepare them, a special dish: Lobster in Coconut sauce Colombian style and make a proposal, I would like us to work together and also the "China" Alfonzina
Mrs. Marianella, said:
