Thank you for your question, , it's a great one. To make sure, I'm not an expert, a doctor or nutritionist. The thoughts below are just my layman understanding: it doesn't seem that having carbs at 5% of your entire macronutrients intake (fat being at 75%-80% and protein at 15%-20%) is hurting your body. Quite the opposite: it's consuming as many carbs as we are in our modern Western diet that is leading to all kinds of inflammations, diseases and auto-immune responses from our bodies. As long as you make sure to consume some carbs (at about 5% of your macronutrients) and as long as they come from fresh healthy sources, like green leafy vegetables, avocados, broccoli etc., I believe you should be fine. But definitely consult your physician or nutritionist, if you have special conditions or are simply unsure how to go about it.
